5 Ingredient Pita Bread

Citation: Half Baked Harvest

Ingredients:

1 cup hot (not boiling) water

2 packets instant yeast

2 1/2 cups all-purpose flour

2 teaspoons salt

1 tablespoon olive oil, plus one more for bowl

Method:

In large mixing bowl, mix hot water and instant yeast. Wait 3 minutes for yeast to dissolve. Add flour, salt, and olive oil, and mix with your hands until dough comes together and start kneading until it becomes elastic and stretchy. This should just take a couple minutes of kneading. Lift dough up and add olive oil to the large mixing bowl. Touch dough to olive oil and spread over the surface of the dough. Let the dough rest for 1 hour by covering it with plastic wrap and letting it sit.

Once an hour is up, make 7-8 balls out of the dough. Sprinkle counter with a little all purpose flour and start rolling out. Add dough to hot frying pan, it should bubble up a little and be ready to flip very quickly. They are done when both sides have brown spots (as pictured above). Let cool and cut in half. These should open up into pockets in the middle (not all of mine were perfect pockets first time around so don't be discouraged if yours are not either!) Stuff with Greek style chicken, hummus, mixed greens, cucumber slices, red onion, and feta!
