Coconut Cilantro Lime Brown Rice

Ingredients:

1 cup brown rice

1 can coconut milk

1/4 cup water

1 bunch cilantro, leaves separated and chopped

1 lime, juiced

Method:

Put rice, coconut milk, and water in saucepan over high heat until boiling. Reduce heat to low, cover, and cook for 20 minutes, or until rice is soft. May need to add a few tablespoons of water if needed.

Stir with fork when cooked. Sprinkle cilantro leaves and lime juice, stir. Enjoy!
