Sweet Potato Tots

Ingredients:

2 large sweet potatoes

1 egg

1/4 cup flour

1/4 teaspoon salt

1/4 teaspoon garlic powder

1/4 teaspoon paprika 

Method:

Heat up a large pot of salted water and preheat oven to 375 degrees F.

 

Once the water comes to a boil, add in the two sweet potatoes, skins and all and allow them to cook for about 20 minutes.

Once they have cooled off, grate them into large slivers and transfer them into a large mixing bowl. Add the rest of your ingredients, mixing everything together until fully combined, and then scoop into small balls.

Line a baking sheet with aluminum foil or parchment paper and bake your sweet potato balls for 30 minutes or until the outsides are nice and crispy. Serve these warm with some ketchup or your favorite dipping sauce.
