3 Ingredient Homemade Reese's Peanut Butter Cups

Ingredients:

1 cup of semi sweet chocolate chips, divided into half (you can try milk chocolate, dark chocolate, or white chocolate!)

4 tablespoons coconut oil, divided

1/2 cup all natural peanut butter

Method:

Line a muffin tin with parchment liners, or use a silicone muffin pan. 

In a small mixing bowl, place 1/2 cup chocolate chips and 2 tablespoons coconut oil. Microwave for 20 seconds. Take out and stir. The chocolate won't be melted yet, but this step is important! Put back in microwave for another 20 seconds, take out, stir. If needed, put back in microwave for another 20 seconds, take out, and stir. As you stir, the chocolate should melt, be shiny and glossy, and smooth.

Place 1 teaspoon in each muffin liner, and with a spoon, press against sides to create the classic Reese's shape! You can skip this step if you want. If skipped, the final product comes out like a stacked chocolate/peanut butter/chocolate sandwich. Nothing wrong with that! You should use all the chocolate you've melted so far on this step.

Place in freezer for 10 minutes to harden. At this time, also put jar of peanut butter in freezer to harden a bit.

In mixing bowl, place rest of chocolate chips (1/2 cup) and rest of coconut oil (2 tablespoons). Microwave for 20 seconds. Take out and stir. The chocolate won't be melted yet, but this step is important! Put back in microwave for another 20 seconds, take out, stir. If needed, put back in microwave for another 20 seconds, take out, and stir. As you stir, the chocolate should melt, be shiny and glossy, and smooth.

Take the jar of peanut butter and muffin tin out of freezer. With a tablespoon, scoop out approximately 2-3 teaspoons of peanut butter and place in each muffin liner. With the back of the spoon, press down so that the peanut butter is disk shaped, in the direct center of the muffin liner. Put back in freezer for 10 minutes.

Stir the chocolate in the mixing bowl. Remove muffin tin from freezer. Work quickly on this next step - the chocolate will start to harden as it hits the cold peanut butter. Take 1 teaspoon of chocolate and pour over the peanut butter in each muffin liner. After each pour, use the back of the spoon to spread the chocolate to cover the peanut butter.

Put in freezer for another 10 minutes for the chocolate to harden.
