Greek Style Chicken

Ingredients:

Chicken:

3 Chicken Breasts, sliced in half lengthwise 

Olive oil, for cooking

Marinade:

4 boneless skinless chicken breasts

1/3 cup olive oil

1/4 cup balsamic vinegar

juice of 1 lemon

4 garlic cloves , minced

1 tbsp oregano

2 tsp thyme

1 tsp salt

1 tsp ground black pepper

Method:

In a small bowl, combine all ingredients for marinade. Pierce chicken with knife and pour marinade over chicken and let rest for 15 minutes. In a large frying pan, heat olive oil on medium heat. Place chicken in frying pan to start cooking. Flip chicken over when halfway cooked. After both sides are lightly browned, take off heat and either slice across to serve over a salad, or dice to to stuff into a pita.
