Quinoa Fried "Rice"

Ingredients:

2 tablespoon olive oil

2 cups cooked quinoa

1 cup frozen stir fry veggies

2 eggs, beaten

2 links chicken sausage, diced

1/4 cup soy sauce

1 teaspoon fresh ginger, grated

1 teaspoon fresh garlic, grated

1/4 cup sesame seeds

1/2 teaspoon salt

1/2 teaspoon pepper

Method:

In a large frying pan, saute quinoa in olive oil over medium heat. In a saucepan, boil water, blanch frozen veggies, and drain. Make a well in the center of the frying pan by pushing all quinoa to the sides of the frying pan. Add eggs and stir gently to cook. Once fulled cooked, stir quinoa and egg together and add sausage and veggies. Stire in soy sauce, ginger, garlic, sesame seeds, salt and pepper.

 

Ready to serve! Top with Siracha, more sesame seeds, and a splash of soy sauce if desired.
