Egg Muffins

Ingredients:

12 eggs

Salt

Pepper

2 tablespoons olive oil

3 garlic cloves, chopped

1 small yellow onion

1 or 2 Morning Star Veggie Sausages

1/2 Roma tomato, for garnish

1 green onion, for garnish

Optional:

Your own toppings - chopped spinach, black beans, diced zucchini, diced yellow squash, chopped broccoli, shredded or feta cheese

Method:

Preheat oven to 350 degrees. Line a muffin tin with parchment paper liners. In a large mixing bowl, whisk eggs with salt and pepper and set aside.

In a large frying pan, saute rest of ingredients and any vegetables you want to add, until onion is translucent. Pour into liners, add cheese if desired, and bake for 30 minutes until the eggs are cooked through. Add tomato and green onion garnish. Ready to eat!

Store extra in Ziplock bag in the fridge.
