Mexican Style Brown Rice

Ingredients:

2 cups brown rice

3 tablespoons olive oil

1/2 teaspoon of salt

1/2 teaspoon of pepper

1 tablespoon cumin

2 tablespoons of cilantro, chopped (optional)

3 garlic cloves, minced

1/2 white onion, diced

1/2 can 8 oz. tomato paste

4 cups chicken broth

Method:

In a medium saucepan, heat oil and rice together. Keep stirring and keep heat under medium so rice doesn't burn. Let rice get slightly browned and add salt, pepper, cumin, cilantro (if using), garlic, onion, and tomato paste. Stir together and add 4 cups chicken broth. 

Let boil, then reduce heat to low, cover, and let cook for 25-30 minutes, until liquid is soaked up and rice is cooked.

Fluff with a fork. Serve with cilantro garnish if desired.
