Roasted Vegetables

Ingredients:

1 stalk brussel sprouts, halved

1/2 head cauliflower, chopped 

1/2 sweet potato, chopped

1/2 teaspoon salt

1/2 teaspoon pepper

3 tablespoons olive oil

1 tablespoon cumin

*can use carrots as well in this recipe

Method:

Preheat oven to 400 degrees.

Put all ingredients on cookies sheet, and mix together with your hands until all vegetables are coated.

 

Leave in oven for 20 minutes, but check for doneness at 15 minutes.

Enjoy!

Keep in airtight container in the fridge.
