Sweet Potato Crust Pizza

Ingredients:

Crust:

2 cups mashed sweet potato (directions below, use 2 large sweet potatoes)

2 cups oat flour (to make at home: place 2 1/2 cups rolled oats in Vitamix and blend until a fine powder consistency is reached - measure out 2 cups for accuracy)  

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon crushed red pepper

1 teaspoon dried oregano

1 teaspoon dried basil

Pizza:

3/4 cup pizza sauce

Toppings of choice - zucchini, red onion, diced chicken, olives, mushrooms, peppers

1 cup mozzarella cheese

5 Basil leaves, stacked, rolled, and cut into ribbons

Method:

In a medium saucepan, boil 3 cups of water. Leaving the skin on the sweet potatoes, chop into cubes, and add to boiling water. Let cook until very soft, checking by piercing with a fork to check. Strain in colander. Place back in saucepan and mash. Measure out 2 cups and add to clean mixing bowl. Add 2 cups oat flour as well as garlic powder, onion powder, crushed red pepper, dried oregano, and dried basil. Oil hands and mix with hands until well combined.

 

Preheat oven to 400 degrees.

 

Place parchment paper on baking sheet and form the crust into a circular shape, pressing firmly so the crust becomes 1/2 inch thin all around. Use rolling pin if needed. Bake for 18 minutes.

Add pizza sauce, toppings, and cheese on top. Place back in oven for 10 minutes. Garnish with basil ribbons and enjoy!
