Zucchini Boats

Ingredients:
4 large zucchini
2 tablespoons olive oil
12 oz. mushrooms, finely diced
1/2 small red onion, diced
1/2 red pepper, diced
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 teaspoon garlic powder
1/4 cup breadcrumbs or shredded cheese (for topping before baking)
Method:
Slice zucchini in half lengthwise and scoop out insides with a teaspoon, to make boats. In a saucepan, heat olive oil and saute mushrooms for 10-12 minutes (until they are passed their watery stage, and almost crispy in texture). Add red onion, red pepper, salt, pepper, and garlic powder and saute for an additional 5 minutes.
Fill the zucchini boats with mushroom mixture and top with breadcrumbs or shredded cheese. Bake in an oven preheated to 350 degrees for 20 minutes. These can be a great side to a meat dish, or good on their own as well!
