Baked Oatmeal

Citation: The Wholesome Dish

Ingredients:

2 eggs

1/2 canola or vegetable oil

1 cup packed brown sugar

1/2 cup applesauce

1 1/2 cups almond or coconut milk

2 teaspoons vanilla extract

1/2 teaspoon salt

1 tablespoon ground cinnamon

3 cups old fashioned rolled oats

1 teaspoons baking powder

Optional:

Your own toppings - nuts, blueberries, chocolate chips, coconut flakes, etc.

Method:
 

Preheat oven to 350 degrees. Line a muffin tin with parchment paper liners. In a large mixing bowl, whisk eggs, oil, and brown sugar until sugar in dissolved. Add the applesauce, milk, vanilla, salt, and cinnamon. Whisk until well combined. Stir in oats and baking powder.

Fill each liner with 1/4 cup of oat mixture. Add favorite toppings and push down with a spoon. Bake for 30 minutes.​ Ready to eat!

Store extra in Ziplock bag in the fridge.
