Cous Cous Crunchy Salad

Ingredients:

 

1 cup cous cous

1 1/2 cup water

1 English cucumber 

1/2 large red onion

1/2 red pepper

1/2 orange pepper

1/2 yellow pepper

8 cherry tomatoes

1/2 cup mixed greens or spinach

1 lemon, juiced

1 teaspoon salt

1 teaspoon pepper

*I often add 1 can drained chickpeas or 1 can drained black beans and 1/2 cup crumbled feta to this recipe

Method:

In a small saucepan, boil water. When boiling, add cous cous, turn off heat, and cover. 

Dice cucumber, red onion, peppers, and halve tomatoes. 

Uncover cous cous and fluff with a fork. Transfer to mixing bowl. Add chopped vegetables, and mixed greens or spinach. Add lemon juice, salt and pepper, and chickpeas or beans and feta if adding. Enjoy!

Keep in airtight container in the fridge.
